Potato Puffs

I attended a baby shower on Saturday, and I'd been asked to make some sort of potato puff-finger food, as mashed potatoes are the mom-to-be's favorite food. I'd never made anything like this before, so I went to the internet for a recipe. I found one and tried it, but it was too soupy before baking and kind of weird and very bland. So I tweaked the recipe a ridiculous amount until it's truly my own and came up with this:



Cheesy Potato Puffs

4 medium potatoes
4 Tbls. salted butter
1/2 cup milk
1 cup sharp cheddar cheese, grated
1/4 cup green onion, chopped
Salt, to taste
2 eggs, separated

Wash, peel, and cube potatoes. Add water to cover and boil until fork tender. Drain water, then mash potatoes. Add butter, milk, cheese, green onion, and salt. Separate the eggs. Beat the yolks and add to potato mixture. Beat the whites until fluffy and stiff. Fold into potato mixture. Using a small scooper, put one scoop of potato mixture each into mini muffin cups. Bake at 350 degrees for 25-30 minutes.

Makes approximately 4 dozen mini potato puffs.

I received a lot of compliments on these, which was nice since I made up the recipe the morning of the shower! My friend who is into all-things-fancy even commented on how fancy they looked! I love it when things are easy but don't look it.

I can't take credit for the little ID plaque. One of the ladies who organized the shower had those waiting for everyone's dishes.

Interesting. I never would have thought potatoes could have found there way into little cupcake liners. I've been on a potato kick lately - might try these soon.
