Sick Again

Things lately haven't gone according to plan. I started my annual spring tutoring gig on Thursday. Things look like they'll go well, as I have tiny classes this year (the largest has only 4 students), and all my students were extremely polite and well-behaved. That's a first! They even showed up on time. Amazing! (I'm tutoring struggling students to prepare them for the reading portion of the Texas Assessment of Knowledge and Skills at the end of April. They have to miss their electives to come to my class, and often their electives are the only classes they truly enjoy in school, so getting them to tutoring on time and with a good attitude has been a struggle in previous years.)

Wouldn't you know, I got sick on my first day there. Partway through the day, the fever, chills, sore throat, and body ache started. I came home with a 101-degree fever. *sigh* I saw the doctor, and I'm being treated for strep, even though the doctor didn't officially test for it.

My weekend hasn't been much fun. I didn't intend to stay away from the blog for so many days, but I didn't feel like doing much on the computer.

Lucky for me, I'd made this black bean salsa on Wednesday.



It's made for some super-easy meals while I'm feeling lousy. It can be eaten like a typical salsa with chips, or made into quesadillas and nachos. I didn't have any flour tortillas, nor did I feel like shopping for them, so I went with nachos a couple of times this weekend. Just put the salsa on the chips, sprinkle on shredded cheese, and pop in the oven for a few minutes. Pretty effortless and yummy!



The recipe came from this article about a chef who is working with Oregon Food Bank to teach low-income people how to cook and feed their families for less. I wish more places were doing this, as cooking and shopping economically for food are important life skills.

Being sick (3rd time in less than 3 months!) is a pain, but having food already in the fridge is a very good thing!

Now let's hope that I'm all better by Tuesday, as I'll be back in school working hard with my students.

I hope you're feeling better soon! Seems like a lot of people have been sick lately... The salsa looks yummy though!
